Tomato Ketchup- Sugar and Nasties free


This list is long, but I like strong flavours for my sauces and I think these ingredients make the sauce extraordinary  You are welcomed to change it to your liking. I know this one is fantastic!

Ingredients:
1 large can diced Tomatoes in Tomato Juice
2 Tablespoons Tomato paste
3 or 4 Large cloves of Garlic
1 Medium Yellow Onion
2 Apples or Pears
1 medium Sweet Potato
1 tablespoon olives oil/coconut oil

1 tablespoon each of the following:
Ground Coriander
Turmeric
Hot Paprika
Cocoa Powder
Apple cider vinegar (you can add more at the end when you check for flavours)
Soy Sauce or Coconut Amino or Tamari
Worcestershire sauce

1 Teaspoons of the following:
Cumin
Chili Powder

120g Stevia
1 baby food prune or strawberry purée
Salt and Pepper to taste

Preparation:
Sauté Garlic & Onions until Tender with the olive oil. Add Tomato paste and Sauté to bring out its flavours. Then add chopped apples and cubed sweet potato and stir for a couple of minutes.While the apples and Sweet Potato are cooking  mix the rest of the ingredients with tomatoes add to pot when veggies soften. Bring to a boil, then reduce heat and simmer uncovered for about 40 minutes stirring occasionally to avoid sticking at the bottom. Then Purée everything in the pot with a stick blender. Taste to adjust flavours and add whatever you fancy and let it cook for another 5 minutes. Take off heat and let it cool. Then time to put in containers. keeps in the fridge for about 3 to 4 weeks.
No more crazy kids high on sugar and preservatives from commercial Ketchup.
