O Triple S- Omelette Smoked Salmon Sushi

The easiest Sushi ever and Low Carb!!

Here is my O Triple S for you.

Ingredients:
1 Pack Nori Sheets ( they usually come in 10)
1 or two large Carrots
1 Spring Onion whites and greens
2 Free Range eggs
100g Smoked Salmon
1 teaspoon Toasted Sesame oil
Toasted Sesame seeds Black or white
Dollop of Wasabi and other mustards or Horseradish
Say Sauce and a little more sesame seed oil to serve and Pickle ginger
A Sushi rolling matt makes the rolling easier, but you can do it without it too.

Preparation:
Make an Omelette by beating eggs and cooking with sesame oil. Don't overcook. Take off heat and let it cool. Meanwhile, peel carrots and shave strips with the peeler lengthwise to make ribbons. Cut spring onions diagonally. Then place Nori sheet on rolling matt and place half the omelette, slice of the smoked salmon,a few carrot ribbons and a few of the spring onions. Gather and roll into sushi shape. Repeat until you run out of ingredients.
Cut diagonally to make a nicer presentation.
Drizzle some sesame oil and soy sauce on plate, then add wasabi or mustard or horseradish and decorate with spring onions and pickle ginger. You can serve more soy sauce on the side for dipping.
You can get quadruple the ingredients to make more, but this is a nice lunch for 1 and Very low carb! Oyshiiiii! itada kimatsu!
